Setting the Table

The story behind the recipe

There’s something comforting about a warm slice of meatloaf fresh from the oven. It’s one of those meals that feels familiar and nourishing, whether you’re serving it for a weeknight dinner or enjoying leftovers the next day.

I don’t eat red meat anymore, but I still enjoy the cozy flavors of traditional comfort foods. Over the years, I’ve learned that a few simple substitutions can transform an old favorite into something that fits the way I eat today.

This gluten-free, dairy-free turkey meatloaf is tender, flavorful, and topped with a sweet and tangy glaze that caramelizes beautifully in the oven. Best of all, it’s made with everyday ingredients that you may already have in your kitchen.

If you’re looking for a simple, comforting meal that doesn’t require complicated ingredients, I hope this recipe finds a place at your table.

Filling the Bowl

What You’ll Need

For the Meatloaf

  • 2 pounds ground turkey

  • ½ cup gluten-free panko breadcrumbs

  • ¼ cup low-sodium chicken broth

  • 2 large eggs, whisked

  • 2 teaspoons dried parsley

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons ketchup

  • 1 teaspoon salt

  • ¼ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

For the Sauce

  • ¼ cup ketchup

  • ¼ cup barbecue sauce

  • 2 tablespoons light brown sugar

A Few Ingredient Notes

Ground turkey: I use ground turkey because I no longer eat red meat, and it creates a lighter version of traditional meatloaf without sacrificing flavor.

Gluten-free panko: The panko helps bind the ingredients together while keeping the meatloaf tender.

Chicken broth: A small amount of broth adds moisture, which is especially helpful when cooking with lean ground turkey.

The glaze: The combination of ketchup, barbecue sauce, and brown sugar creates a sweet and tangy topping that pairs perfectly with the savory meatloaf.

Creating the Magic

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.

  2. Place the ground turkey in a large mixing bowl and set aside.

  3. In a separate bowl, whisk together the eggs, chicken broth, parsley, Worcestershire sauce, ketchup, salt, black pepper, garlic powder, and onion powder.

  4. Stir the gluten-free panko breadcrumbs into the wet ingredients until combined.

  5. Pour the breadcrumb mixture over the ground turkey and gently mix with your hands until everything is just combined. Be careful not to overmix, as this can make the meatloaf dense.

  6. Shape the mixture into a free-form loaf and place it on the prepared baking sheet.

  7. In a small bowl, stir together the ketchup, barbecue sauce, and light brown sugar to make the glaze.

  8. Spread the glaze evenly over the top of the meatloaf.

  9. Bake for 45 to 55 minutes, or until the center reaches an internal temperature of 160°F.

  10. Remove the meatloaf from the oven and let it rest for 5 to 10 minutes before slicing and serving.

Seasoning with Wisdom

  • I like to whisk the eggs, broth, seasonings, and breadcrumbs together before adding them to the turkey, then gently mix everything with my hands. This helps distribute the flavors evenly and keeps me from overmixing the meat.

  • I prefer making my meatloaf free-form on a parchment-lined baking sheet rather than in a loaf pan. The excess grease can drain away from the loaf instead of collecting around it, which gives the meatloaf a better texture.

  • Don’t skip the resting time. Letting the meatloaf sit for 5 to 10 minutes helps it hold together when sliced and keeps the juices inside.

Planning Ahead

  • I’ve often prepared this meatloaf earlier in the day and refrigerated it until I am ready to cook it at dinnertime. You can also make it up to one day ahead, cover it tightly, and keep it in the refrigerator until you’re ready to bake.

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.

  • Individual slices freeze beautifully and make an easy future meal.

  • Leftover meatloaf is delicious reheated for lunch the next day or tucked into a sandwich on your favorite gluten-free bread.

Serving My Final Thoughts

At our house, I almost always serve this turkey meatloaf with fluffy mashed potatoes and green beans. The mashed potatoes are perfect for soaking up a little extra glaze, and the green beans add a fresh, simple side that balances the meal.

Other delicious options include:

  • Roasted sweet potatoes

  • A simple side salad

  • Steamed broccoli

  • Honey-glazed carrots

  • Roasted Brussels sprouts

No matter what you choose, this meatloaf makes a comforting, satisfying meal that’s perfect for a cozy dinner at home.
